2 cup maida ( wheat flour )
4 Tablespoon oil
Salt to taste
1/2 teaspoon sugar powder
For Masala
1.5 cup moongdal
1 teaspoon oil ( olive oil – if you afford )
Salt to taste
2 tablespoon oil
1 teaspoon coriander seed n souf
1/2 teaspoon cumin seed
1/4 teaspoon hing ( shahi hing )
2 teaspoon red chili powder ( bhagvati )
1/2 teaspoon turmeric powder
1/4 teaspoon garam masala ( preferably everest )
4 green chili ( medium sized )
1/2 teaspoon black salt
Salt to taste
1/2 teaspoonchana Masala
1/2 teaspoon mango powder ( aamchoor powder )
1 tablespoon cashews plus kishmish ( raisins ) , you can also use other dry fruits
Oil for frying
Coriander leaves for garnishing
For topping

method
Wash the moong dal ( green ) and put it in the cooker.
Add water, add water only in small quantity . To just wet moong dal .
Heat oil in a pan in medium flame. Then add asafoetida, coriander, fennel, green chilies to it.
Then add all the spices mentioned above. Add moong dal. Then Add cashews and raisins. Your Kachori masala is ready.
Now take all purpose flour ( maida ) in a bowl. Add salt as needed , ajwain seeds and warm oil. Then add water and make a soft dough.
Make small balls from one of the spices , masala we made .
Make small balls from dough . Then take a ball from the dough.
Then place the masala. Fold it well . Stick from all sides. Then lightly press it from all sides.
Heat oil in a pan. Oil should not be heated too much. When it is just a little hot, then add the kachori. And fry on medium heat.
Heat 4 tsf oil in a pan on medium flame. Oil should not be heated too much.
When it is just a little warm , then add kachoris one by one . And fry on medium heat. Fry the kachoris till it turns golden brown.
Take a kachori, make a hole on centre . Add sweet chutney plus green chutney, onion, sev on top of it. Your Kachori chaat is ready.
